The season is short and it books early. Usable outdoor weather runs roughly May through September, and everyone wants their patio finished before Memorial Day, so the April and early May calendar fills first. A hard rain in the first hours after a pour can wash the smooth finish off the top and leave it rough on the feet, bumpy and discolored. Sealer will not hide that.
